This Thai chicken salad recipe uses rotisserie chicken and a quick homemade peanut dressing for an easy and healthy meal.

SCALE 

INGREDIENTS

  • 2 tbs. fresh minced ginger
  • 1/2 cup peanut butter
  • 1/2 cup water
  • 2 tbs. soy sauce
  • 3 tbs. hoisin sauce
  • 1/4 tsp. red pepper flakes
  • spinach
  • pulled rotisserie chicken
  • shredded/grated carrots
  • bean sprouts (alfafa sprouts)
  • cilantro
  • green onions

INSTRUCTIONS

  1. Whisk together ginger, peanut buter, water, soy sauce, hoisin sauce, and red pepper flake in a small bowl…and voila! Spicy Thai peanut dressing, homemade.
  2. Chop and mix the remaining ingredients
  3. Drizzle with dressing
