This Thai chicken salad recipe uses rotisserie chicken and a quick homemade peanut dressing for an easy and healthy meal.

INGREDIENTS
- 2 tbs. fresh minced ginger
- 1/2 cup peanut butter
- 1/2 cup water
- 2 tbs. soy sauce
- 3 tbs. hoisin sauce
- 1/4 tsp. red pepper flakes
- spinach
- pulled rotisserie chicken
- shredded/grated carrots
- bean sprouts (alfafa sprouts)
- cilantro
- green onions
INSTRUCTIONS
- Whisk together ginger, peanut buter, water, soy sauce, hoisin sauce, and red pepper flake in a small bowl…and voila! Spicy Thai peanut dressing, homemade.
- Chop and mix the remaining ingredients
- Drizzle with dressing
