OREO FUNFETTI CUPCAKES
Ingredients
CAKE: Scratch Version
1 3/4 C. cake flour
1 1/4 C. flour
3 tsp. baking powder
1 tsp. salt
1 3/4 C. sugar
1 C. butter room temperature
4 eggs room temperature
2 1/2 tsp. vanilla extract
1 C. milk whole or buttermilk is best
1/3 C. sprinkles
CAKE MIX VERSION:
1 box white cake mix
3 eggs
1/3 C. melted butter
1 C. sour cream
1/2 C. milk or buttermilk
1/4 C. sprinkles
OREO BUTTERCREAM:
8-10 oreos finely crushed
1/2 C. unsalted butter room temperature
8 oz. cream cheese
2 tsp. vanilla extract
3-4 C. powdered sugar
24 extra Oreos for decoration
Instructions
1. Preheat oven to 350 degrees and line pans with cupcake liners. (Optional: you can place an Oreo at the bottom of each cupcake liner and then fill with batter on top.)
